Riviera club sandwich

Ingredients

3 soft bread slices 

1 jar of eggplant dip 

Cucumber 

Philadelphia 

Pickles 

Iceberg lettuce 

Red cabbage 

White cabbage

1 Toast the bread and spread one slice with the Philadelphia.   

Layer on the pickles, iceberg lettuce, red and white cabbage, then top with another slice of bread.

3 Spread with the eggplant dip and add the cucumber, pickles, iceberg lettuce, red and white cabbage.

Finish with the final slice of bread spread with the eggplant dip.
